But the original information theory in Bell Labs was about the artificial (not natural) practice of sending signals along a channel for technological, commercial purposes. You have a signal, a channel that cuts down the noise, and an interpreter at the receiving end who finds meaning in the signal. When this theory is blown up into cosmology, it entails something like Aristotle's teleology. At least, you'd have to posit purpose and value even in natural events, and it's not clear that that theory would be methodologically scientific anymore. At least, by my assessment (and to put it bluntly), science is based on the Luciferian practice of objectification. If scientists start finding subjectivity at the bedrock of nature, the methods of science would no longer be in play. Scientists would have turned into theologians, and cosmological information theory would be a full-blown religious myth.
